Abstract
This study aimed to determine the challenges in learning culinary fundamentals competencies in a flexible learning environment among hospitality management students in terms of knowledge, skills, and attitude. The study utilized a descriptive research design. A researcher-made questionnaire was used as the primary instrument in gathering data from one hundred fifty (150) Hospitality Management students of President Ramon Magsaysay State University – Main Campus, Iba, Zambales. The respondents were selected using purposive sampling. The findings revealed that the majority of the respondents were young adult females. The respondents perceived that challenges in learning culinary fundamentals competencies in a flexible learning environment among hospitality management students was often a challenge in terms of knowledge, skills, and attitude. The results further showed that there was no significant difference in the assessment of challenges in learning culinary fundamentals competencies in a flexible learning environment among hospitality management students when grouped according to profile variables such as sex and age. Based on the findings, the researchers recommended that instructors provide varied learning strategies and practical activities to improve students’ knowledge and skills in culinary education. The use of technology and collaborative activities may also enhance students’ engagement and motivation in learning culinary competencies.
